For wild game lovers, Hare meat is a refined specialty thanks to the strong flavor and wild marked smell. In addition to the salmì version, Tuscan tradition has been handed down mainly through the famous Pappardelle with Hare Ragout, sought-after dish in the typical local restaurants. We would like to point out that there are many recipes. For our version we choose, as per tradition, to sweeten the taste with dark chocolate and to add few pork meat making the sauce more pleasant and less fibrous.
